Saltine Christmas Cracker Toffee

saltine cracker toffeeHere’s an easy (completely unhealthy) anytime recipe that is divine!  I’ve seen and used many versions of this candy so I have no idea where it originated, but it’s a great go-to recipe when you need to take treats anywhere.  People gobble these!

35 saltine crackers
1 cup brown sugar
1 cup butter
2 cups chocolate chips (semisweet or milk chocolate)
Crushed candy canes (optional)

  1.  Preheat oven to 400 degrees.  Line 11×17 jelly roll pan with non-stick aluminum foil.
  2.  Arrange crackers on pan.
  3.  Melt butter in microwave.  Combine butter and brown sugar in a small saucepan and stir constantly until mixture comes to a boil.  Boil for three minutes, stirring occasionally.
  4.  Remove from heat and pour mixture onto crackers. Bake for 6 minutes.
  5.  After removing from oven, sprinkle chocolate chips on top of the crackers.  Let sit for two minutes, then spread the chocolate.

We used crushed candy canes on top so I could make these more festive, but nuts also work or nothing at all!

    I’ve gained 12 lbs since Oct 1st. Tragic. I WILL get it back off.

    when I was more than poor, I used to make something a bit similar for my and Christen’s desserts. Saltine cracker, add peanut butter and marshmallows, toast until the marshmallow is golden. YUMMO! cheap and awesome dessert!

  13. Oh, this looks GOOD! I don’t think I’ve ever seen Saltine crackers used in a holiday recipe before! I always have those in the house!

    And yes, quitting running combined with an endless supply of Christmas treats has caused an 11 pound weight gain since November 5th. YIKES.

  22. I have gained a few pounds because I have been eating Christmas cookies for breakfast for the past 2 weeks.

    My mom makes a dessert similar to this but uses ritz crackers and puts a rolo on top and bakes it in the oven until melty. Yummo!

  44. Yes, my clothes are definitly feeling tighter, probably because I made two batches of nanimo bars and ate 1 1/2 by myself. 🙂 The rest I am saving for a gift. Resisting that temptation is hard.

    That is such a simple dessert idea. I like the idea of saltines being used to balance out the sweet.
